      Mushroom cheese omelette, the ultimate healthy treat for anytime!

      When it comes to a quick, easy and nutritious meal, you really can’t go wrong with a mushroom and cheese omelette. Perfect for anytime of day, an omelette is ideal for those who want to eat something hearty as well as something healthy.

      • 3 x eggs
      • 200 g brown mushrooms
      • 1 red onion
      • 30 g grated Parmesan cheese
      • 1 tbsp fresh parsley
      • 1 tsp virgin olive oil
      • Optional unrefined salt, black pepper

      Description

      The great thing about cooking is that it gives you the chance to create delicious, hearty and nutritious meals yourself at home. The only problem that comes with cooking from scratch is that it takes time. Something that we don’t always have.

      Rather than reaching for a ready meal when time is short, why not see if you can make yourself a quick, tasty and healthy dinner instead? Something that a mushrooms cheese omelette can certainly offer!

      With just a few ingredients and minimal fuss, you can create a family pleasing dish that is not only ideal to enjoy alone, but also great to have as a family dinner too. Best of all, you can always add in your own twists and ingredients to really make it your own.

      Steps to follow

      Step 1

      Finely dice the onions and parsley. Cut the mushrooms into quarters. These can then be put to the side to use later on. Whisk up the eggs with a fork in a jug or bowl until they are perfectly mixed.

      Step 2

      Heat up the oil (olive oil works best but you can also opt for coconut oil for a healthy alternative) and add the diced onion. Cook for 2 minutes until soft before adding the mushrooms and cooking for a further 5 minutes on a gentle heat. Once all cooked, you should remove the mushrooms and onions from the pan and place to the side.

      Step 3

      Add some more of the oil to the pan and heat. Now it is time to add your egg, pouring them gently into the hot pan. You will then need to move the pan around to ensure that the eggs are spread around evenly. The omelette will need to be cooked on a medium heat for around 4 minutes as this will ensure that it sets.

      Step 4

      Remove the pan from the stove and turn off the heat. Flip over the omelette, either by tossing the pan or using a spatula, then leave for another 2 minutes to finish off. Now is the time to add your mushrooms and onions.

      Step 5

      The fillings will need to be added to one side of the omelette, as this will allow you to fold it over before you serve. Once they are on one half you need to sprinkle the cheese over the top and give it a few seconds to melt. The omelette should then be folded over in half and the parsley sprinkled on the top as a colourful and delicious garnish to your perfectly cooked Mushroom Cheese Omelette meal!
